Herb baked chicken and veggies

1 lb chicken (i cut this in 4 pieces)
1tsp season salt
1/2 tsp garlic powder
1/2 tsp black pepper
2 tsp dried basil
2 tbsp olive oil (i use half olive half melted light butter)
Sm yellow onion
Veggies this can pretty much be what you want to try but remember even though veggies are 0points on WW it could add a point or 2 to your finished meal.

2 large potatoes cut into 1-1.5 inch chunks
1 cup of chopped zuchini/yellow squash
1 cup carrot

prehead oven to 400*.
take all season and mix in with the olive oil. place the cut up veggies in a casserole dish with lid. Using a pastry brush, put about half the mixture all over the veggies in the bottom of the pan and cover. reserve the zuchini though as it bakes quickly and it will be mushy. Bake for about 10min. after about 10min take the chicken breast and brush the remaining mixture on the chicken and then place that on top of the veggies and cover again. bake for about 45 min. after about 10-15 min you can add the zuchini in under the chicken.

I just put zuchini in this for the first time they other day and it turned out delicious. though it was a tad over cooked. so next time i will add it about half way through the cooking process.

the original recipe calls for green pepper, roma tomato and sweet potatoes but none of those i think i will care for but if you want to add them you can. i substituted the above with the onion, carrots and zuchini.

when put into the points calculator it came out to 7-8points. you could leave out the potatoes for a lower point meal if you like.
