Weight in Day 2/26/11

Nothing lost nothing gained. but i also worked out alot last week so I could have lost but put on muscle. I do know my pants fit better and when i put on my snow pants they are loose around the waist where they use to be so tight that if i bent over my snap popped open. So I am not discouraged.

One thing i found is that i check out recipe books from the library but i can't look at them becuz there are 1. no pictures. i like to see what the meal looks like. if it looks like something i would make i look at the ingredients and 2. there is no reviews. if someone gives it 2 stars i am probably not going to like it. I also like to see reviews to see what others have done to tweek the recipes.

So if anyone knows some good recipe sites with pictures and reviews let me know. i usually hit up the WW site and then fat secret.

This week i got some pork chops. oh and 93% ground beef is on sale so can we call say SPAGHETTI

Weigh in Day 2/19/11

Well it is that time of the week. Weigh in day. According to the scale i lost another 1 lb. so that is a total of 12.5 pounds lost since the start. This also means i lost another point from my daily points :( so i am getting close to what my sisters' get for their daily points. i am at 31 points now and they are at 29.

This weekend I am going to try and take it a little easy cuz my knee has been bothering me. tripping over dogs wacked it out of place a bit and me not being able to rest it ain't helping.

I also started back to water fitness this week. doubles my activity points from what i usually get for doing the elliptical. Hubby and I also went and looked at ellipticals this week and we saw the one we want but we have to figure out how to get there. If we don't get it by the time i go down to visit my family this spring/summer then i will pick up the one my sister has. It really isn't an issue for me as i can go to the gym but dh refuses to workout in front of people so we need to get something for in the house. it will also be helpful that i could to extra excercise during the day or on weekends.

Weigh in Day. Down .5lb

total to date is 11 lbs. Where i went wrong. not enough veggies and fruits. Not thinking before I eat. Oh and Cake. I made Cupcakes and cake this week and ya know i can't avoid some cake. I also didn't go to the gym this week due to the cold but i did excercise using EA sports active. Monday will be a little hard cuz it is Valentines day and that means the kids bringing home sweets and they don't like some of them so yum you know i will eat some.

Chicken Capri

I finally got the stuff to make this and boy was it good. like a caprese salad on a chicken. NUMMY. I made some zattarans long grain and wild rice and any side (dh had green beans, I am going to have broccoli. this one is going in my cook book

Chicken Capri

A super tasty chicken capri recipe that's great for phase 1 South Beach.

Ingredients
4 slices mozzarella cheese
1 cup ricotta, skim
1/2 tsp garlic powder
1/2 tsp ground oregano
1/4 tsp black pepper
1/4 tsp salt
2 tbsps virgin olive oil
4 breasts, bone and skin removed chicken breasts
1 cup chopped or sliced tomatoes

Directions
1.In a blender or food processor, combine the ricotta with the oregano, salt, and pepper. Process to blend.
2.Rub the chicken with the garlic powder. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for 12 minutes per side.
3.Place the chicken breasts, side by side, in a large baking dish and allow to cool.
4.Preheat the oven to 350° F (180° C).
5.Spoon 1/4 cup of the cheese mixture and 1/4 cup tomatoes onto each chicken breast. Top each chicken breast with 1 slice mozzarella.
6.Bake for 20 minutes, or until a thermometer inserted in the thickest portion of a breast registers 170° F (75° C) and the juices run clear.

EA Sports Active 2 for the Kinect (Xbox 360)

I finally got around to playing this game. I did easy mode or so i thought. It kicked my ASS. What i love about this compared to the EA sports active for the Wii. 1. no leg strap needed. no controller needed at all since you are the controller. 2. the graffics also seems to be a tad more new. The Wii one worked me out too but it was easier to cheat cuz you just needed to move the controller in a right way. Negative. some of the excercises were hard for them to register. maybe i wasn't facing the right direction. Another plus is that it comes with a heart monitor. which is the bomb. I got my heart rate up to 150.

the excercises that kicked my ass were the sprinting. running in place is hard. the mountain biking. the jumping side to side. (I am sorry if a few of you felt small tremors between 1:30 and 2:15) Fun was dodge ball.

so i worked out 26min, got heart rate up to 150 and burned 150 calories.

I don't know if it is all in my head

but my pants feel looser. it is a crazy feeling. but it could be that my pants are just old. We shall see if anyone notices when spring comes around and i start associating with the ladies again at school pick up.

Dh is getting a bonus and he said he will be getting an excercise machine. so excited. it will be nice on days when i don't feel like going to the gym to still get my workout in. exspecially on cold days like today

This week I need to get alot of activity points under my belt. it is Sam's 5th birthday and she wants cupcakes.

Parmesan Almond Chicken

This is a recipe I tried today. It is rather tasty. though the chicken didn't come out crispy. it still was flavorful. I think I would cut back on the oregano. i even used 2tsp instead of 3 and it was still kinda strong. Maybe mix a little breadcrumb with the breading to give it a little crunch factor. I used shredded parm chopped so maybe it is suppose to be made with the Kraft grated. I don't know. but yeah quite nummy

Parmesan Almond Chicken

Tasty chicken breasts with almonds and parmesan.

Ingredients
2 oz parmesan cheese, grated
2 tbsps butter, melted
3 tsps ground oregano leaves
1/4 tsp paprika
1 tbsp dried parsley
1/4 tsp black pepper
1/2 tsp salt
2 lbs chicken breast
1/4 cup ground almonds
Directions1.Heat oven to 400 °F (200 °C)
2.Spray a backing pan with a non-stick cooking spray.
3.Combine all ingredients together in a bowl except butter.
4.Dip chicken in butter and coat with combined ingredients.
5.Place in prepared pan and bake for 20 to 25 minutes or until tender.

Note: chicken can be whole breast or cut into strips, I prefer strips but you decide.

Weigh In Day

I am down 3.5 lbs this week. and dh is down 3 lbs. Yeah! I was worried cuz I am broken and i was reading that it can cause slight weight gain from the bloating. So i was prepared to gain this week.

A few thoughts is 1. I am sick of cooking. trying to cook low fat/low point meals is exhausting. I miss the day of just eating what ever and not really thinking about it. I miss munching. Sure I can still munch but I have to watch what i eat and the serving sizes. Going out to run errands i have to make sure i eat before i go cuz eating out is hard exspecially at fast food places. I no longer can get the fish value meal or the big mac value meal. Nope. i get a kids meal cuz the serving size is smaller. :( Sure i can still eat most of what i use to but it is hard to stop at 1 serving. ya know. Today i had a hot dog on a piece of wheat bread. why wheat...becuz 1. it was less points and 2. it was wheat. yeah i had hot dog buns but i chose to eat the wheat (poor man's hot dog bun, we always ate hot dogs that way growing up)

Chili Meatloaf

Prep time- 15 min
bake time - 55-60 min

1 cup tomato sauce divided
3 tbsp Splenda grandular (divided)
2 tsp prepared yellow mustard
1 1/2 tsp chili powder divided
1 tbsp dried onion flake (i used fresh onions chopped about a half a cup)
1 tbsp dried parsley flakes
1/2 tsp salt
1 pound extra lean ground turkey or beef
1/4 cup italian season bread crumbs

PREHEAT oven to 350*F and spray a 9x5 loaf pan with cooking spray
MIX 1/3 cup tomato sauce, 2 tbsp splenda, mustard, 1 tsp Chili powder, onion, parsley and salt in large mixing bowl. Add meat and bread crumb and mix well (use your hands if you got 'em) Shape mixture into a loaf and put in pan.
MIX remaining tomato sauce, chili powder and splenda in a small bowl and spoon mixture over the meat loaf
BAKE 55-60 min. remove meat love from oven and place on wire rack and cool for 5 min before cutting

Makes 6 (5oz) servings (4pt point plus per serving)

My Jeans

Today i put my jeans on. we were going out to Woodbury and my usual black ones were dirty. so i grabbed my jeans. I don't like jeans. they are just so tight and constricting. they aren't comfy like my yoga type pants. but i have 2 pair. one i got at a garage sale and one i got at walmart. i like the walmart ones the best cuz they are thinner and are petite. Anyway, i put my jeans on and they seem a tad looser. just enuf that i didn't feel to constricted. still not like my yoga pants. not something i want to wear all the time but still they felt good. actually it is 9pm and i still have them on. So we are headed in the right direction but DAMN it is Girl Scout cookie time. yes i am getting some and I am going to try, so very try to control myself. but they are oh so good
